Not only do we have salmonella-free eggs (how nice to listen to the news and just shrug and say 'not my problem'!), but we have been putting up the harvest like fiends. I still have an entire box of beets, about 5 pounds of green beans, and we start tomatoes today. They took a really long time to come on this year, and of course we are scrounging off of Dale and Jeannie. They've just told us to glean what's left on their plants, because they are DONE canning. About two weeks ago, Dale told me they had 20 quarts of juice in already, so I'm sure they probably don't want to look at another boiling water bath until next year!
The traveling butcher comes for Number 16 on October 6, so we'd better get our freezer situation straightened out before then! We've also got corn, beets, and more green chile in the freezer at this point.
And we're in good shape on dry goods, with about 50 pounds of about anything you can think of in the garage. In another couple of weeks, the garage will be cool enough for us to make the trek down to Dibble Farms and buy potatoes and onions.
Hay is laid in for the winter for the horses. Shavings come at the end of the month. I'm pondering putting in the winter's worth of grain for chickens and horses, just to avoid having to schlep 50 pound bags through the snow.
We won't starve this year. And that's not nothing. In fact, it's ridiculously satisfying.
